The Cabbage Soup Recipe
Recipes for the cabbage soup vary, but all are based on cabbage, onions, tinned tomatoes,
green peppers, celery, carrots and onion soup mix. Here is one version of the cabbage soup recipe.
The recipe varies but always includes similar ingredients.
3-6 spring onions (scallions)
2 green peppers 2 cans of
tomatoes
3 Carrots 1 head of celery
1/2 a cabbage
1 package onion soup mix
1 or 2 cubes of bouillon (optional) 1 48 oz can V8 juice (optional)
water to make fluid up to 12 cups
Directions:
Slice spring onions and
place in a large saucepan. Sauté until soft but not browned using cooking spray or water. De-seed the green pepper. Cut
cabbage, carrots, and green pepper into bite size pieces and add to pan.
Add spices and flavorings as
desired. Add 12 cups of liquid, water and bouillon or 8 cups of water plus the V8. Bring to boil then reduce heat
and simmer on a low heat for 2 hours. Season to taste with salt and pepper.
Note: This makes a massive amount of
soup. To fit it into my largest pan I had to use less fluid and add it as required when re-heating the soup. I also froze
some of it in single serve bags. It froze well and tasted just as good as the fresh soup.
